Looks like culinary prodigy Dave Racicot is at it again with edible art at his East Liberty restaurant, notion. At notion, Chef Racicot uses his modernist take on classic techniques, imaginative plating, and single-minded attention to detail in both food and service. The restaurant is said to bring a contemporary interpretation of fine dining to Pittsburgh. Chef Racicot will redefine beloved local dishes in a special six-course tasting menu to show guests that high-end food doesn’t have to be unfamiliar. The menu of iconic items speaks to The ‘Burgh’s multicultural heritage, particularly that of European immigrants who brought a melting pot of Slavic, Dutch, Italian and other culinary traditions to the city in the early 20th century.
Expect dishes that creatively combine old- and new-world traditions with modernist techniques and imaginative plating for a new spin on food that defines Pittsburgh and its history, including Pittsburgh Salad, Pierogies, Cabbage Rolls, Chipped Ham, City Chicken, Haluski, Kielbasa, Clark Bars and Klondike Bars.
